I have so many salmon recipes because salmon is one of my favorite foods! It is so buttery and healthy but DELICIOUS! This one is a really good summer salmon and the other one is good for fall or winter. I really like the caraway and cardamom seeds. It adds an especially flavorful summer flavor! The shallot is also a wonderful flavor but if you don’t have it you can easily substitute it for more garlic, remember, the more garlic there is the better the salmon will taste! This paires really well with chard and rice! Enjoy this treat! Happy cooking!
2 pounds salmon
A few springs rosemary
Juice from 1 large lemon juiced
3 tablespoons butter ,melted
1 teaspoon salt
1 teaspoon pepper
A few pinches of caraway and cardamom seeds
A sprinkle of paprika
1 small shallot minced
A few cloves of garlic(or more:) minced
A few shakes of oregano
A few tablespoons of olive oil
Turn the oven to 350 degrees and line a baking sheet with aluminum foil. Place the salmon on the tray and Evenly spread the olive oil,salt,pepper,rosemary, and paprika on it. In a small bowl, combine the lemon,butter,seeds,shallot,garlic,and oregano. Poor the mixture onto the salmon and put in the oven for 23 minutes exactly, you don’t even need to check the the temperature because at 23 minutes it will be perfect! Take out and enjoy!
Tip: For a more lemon flavor, cut up the access lemon and place it around the salmon so the juice will all blend together.
