Herbed oven roasted potatoes with olive oil




 This is an amazing side dish, a good starch for any meal, it makes a ton so feel free to save some and eat these like breakfast potatoes the next day(that’s what I did)! I love all these flavors and the crunchy outside and soft buttery inside. Enjoy! 


  • 2 pounds yellow potatoes with skin still on them washed and cubed

  • 3 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon thyme

  • 2 teaspoons oregano 

  • 1/2 teaspoon paprika
  •  
  • 2.5 teaspoons salt

  • 1/2 teaspoon pepper


  • Throw all the ingredients in a large bowl and mix until coated. Preheat the oven to 450 and put the coated potatoes on a greased baking sheet, spread evenly. Put in the oven for 35-45 minutes until a fork sticks through evenly, enjoy!
