Fresh Pita bread!




 This is an amazing recipe and I had it as a side dish to go with cuscus,veggies, and hummus! It is so much better than store bought and takes little effort! It does have to rise, so you need to make it a lot sooner than you would be eating dinner or lunch, whatever meal it is for. You can use instant or active dry yeast, I used instant but if you are using active yeast than do a little more! Enjoy! Happy cooking!  


















Combine the yeast,water, and 1 cup of flour in the bowl of a stand mixer, whisk and let stand for 15 minutes. Add the rest of the flour, salt, and 1 1/2 tablespoons of olive oil. With the dough hook, mix until soft and a little sticky for about 6 minutes. On a flour surface, transfer the dough and shape into a ball, place in a slightly oiled Bowl and roll it around in it to coat in oil. Cover with foil and let sit for 2 hours at room temperature. 

Take the dough out if the bowl and place on a floured work surface and flatten out to a circle about 1 inch thick and cut into 8 equal pieces. Roll those into 8 little balls, like shown in the picture above. Cover with plastic wrap and let sit for 35 minutes. Flatten those little balls so they are 1/4 an inch thick circles, Let sit for five minutes, while they are sitting warm up a cast iron skillet.

 Poor a little olive oil in the pan and spread around evenly. Place one flat pita disk on it and cook on one side for 30 seconds to a minute, until golden brown, flip and cook for another 30 seconds until that side is golden brown, transfer to a plate and repeat with the other 7 disks! Enjoy!
